Hot & Spicy Lao Gan Ma Okra (Lady’s Finger)

Stir-fried Lao Gan Ma Okra (Lady’s Finger) with dried shrimps is a rendition of the dish, sambal okra, perfect for fans of Mala Xiang Guo. So other than just the usual sambal okra, why not try cooking up a plate of hot & spicy Lao Gan Ma Okra at home?

Here’s the story of how this dish was developed. >.<

The husband loves okra but I don’t due to the sticky slimy feel. He decided to buy a pack to cook it himself but the sambal we had at home was overly spicy, so we kept digging around the kitchen to see what we can fry with. Lao Gan Ma really seems like a very good replacement for sambal. It turned out really good!

Lao Gan Ma

  • Fried Chili in Oil is used for this recipe, we recommend Spicy Chili Crisp too.
  • As there’s already oil in the chili, so we will only use a little cooking oil for frying.

Okra (Lady’s Finger)

  • Okra contains rows of seeds that release a mucilaginous (sticky) liquid when cut and cooked.
  • Its flavour is quite mild, so cooking with strong, spicy ingredients would be best.
  • Okras that measure between 7-10 cm will be less fibrous and not tough to chew on.
  • Feel free to replace okra with other vegetables like long bean or French beans.

Dried shrimps

  • Rinse the dried shrimps in water to remove any dust or dirt, and drain.
  • Chopping dried shrimps into smaller pieces will help to release more flavor.

Equipment

  • Frying Pan

Ingredients
  

  • 200 g Okra (Lady's Finger) top discarded & sliced diagonally
  • 5 cloves Garlic chopped
  • 10 g Dried shrimps chopped
  • 1 tbsp Cooking oil
  • 2 tbsps Water

Seasoning

  • 3 tbsps Lao Gan Ma Chilli in Oil
  • 1 tbsp Light soy sauce
  • Salt and/or sugar To taste
  • 1 tbsp Shaoxing wine

Instructions
 

  • Heat oil in frying pan. Add chopped garlic and dried shrimps, stir-fry for about 30 secs until fragrant.
  • Add sliced okra and water. Stir-fry for about 2 minutes.
  • Add Lao Gan Ma and soy sauce. Season with salt and/or sugar to your preference. Stir-fry until all seasoning are well mixed.
  • Turn off heat, add in Shaoxing wine while the frying pan is still hot. Again, stir-fry until well mixed and serve,
