Ingredients
  

  • 500 g pork cubed
  • 500 g potato peeled and cubed
  • 2 handful dried mushrooms soaked and cut into bite-sized pieces
  • Water used to soak mushrooms
  • Additional water
  • 1/4 cup oil for frying

Seasoning

  • 2 tbsps light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sugar
  • 1/2 tbsp sesame oil
  • 3 tbsps Shaoxing hua tiao wine
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Garnish

  • Sesame seeds
  • Spring onions chopped

Instructions
 

  • Heat oil in frying pan, over medium fire.
  • Add potatoes fry until slightly brown.
  • Then add garlic and fry for 30 seconds until fragrant.
  • Add cubed pork, stir-fry until slightly cooked.
  • Add mushrooms, fry for another 30 seconds.
  • Add in all the seasoning, mix well.
  • Pour in mushroom water, top with more water until most of the ingredients are covered. Mix.
  • Cover, turn up heat and bring to boil. Then turn heat to medium, let it simmer and stir occasionally until most of the water has reduced.
  • Serve with rice and garnish.
