Pork, Potato & Mushroom Stew
A dish that is comforting and full of earthy flavors can never go wrong over a bowl of rice.
Ingredients
- 500 g pork cubed
- 500 g potato peeled and cubed
- 2 handful dried mushrooms soaked and cut into bite-sized pieces
- Water used to soak mushrooms
- Additional water
- 1/4 cup oil for frying
Seasoning
- 2 tbsps light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar
- 1/2 tbsp sesame oil
- 3 tbsps Shaoxing hua tiao wine
- 1/8 tsp salt
- 1/8 tsp black pepper
Garnish
- Sesame seeds
- Spring onions chopped
Instructions
- Heat oil in frying pan, over medium fire.
- Add potatoes fry until slightly brown.
- Then add garlic and fry for 30 seconds until fragrant.
- Add cubed pork, stir-fry until slightly cooked.
- Add mushrooms, fry for another 30 seconds.
- Add in all the seasoning, mix well.
- Pour in mushroom water, top with more water until most of the ingredients are covered. Mix.
- Cover, turn up heat and bring to boil. Then turn heat to medium, let it simmer and stir occasionally until most of the water has reduced.
- Serve with rice and garnish.
