Medium prawns

Instructions
Heat 2 tbsps oil in frying pan. Add prawns, stir fry until prawns turn pink, remove and put aside.
Now add in chopped onions, saute until slightly translucent, push aside.
Add 2 more tbsps oil. Pour in beaten eggs, scramble egg until it is half-cooked.
Put in rice, stir fry until there are no obvious lumps.
Season with fish sauce, soy sauce, sugar, curry powder, white pepper, salt. Stir fry till well-combined.
Add the prawns back in, pineapple, cashew nuts and raisins. Turn heat to high, stir fry quickly till rice is slightly charred.
Scoop into serving bowl or plate. Garnish with your choice of toppings.
