kaffir lime leaves, shredded finely

cans sardines, 425 g
, drained and flaked
Banana leaves
, scalded (optional)
Instructions
Place ginger, turmeric, chillies, shallots, coriander and coconut cream in a blender. Blend till smooth.
Mix blended ingredients with remaining ingredients, except banana leaves.
Line a small ovenproof dish with banana leaf and pour in fish mixture.
Bake at 180 C for 25 mins or until firm.
Cool slightly and cut into squares to serve.
Or, using scalded banana leaves, wrap into packages and steam or grill for 20 mins.
