Ingredients
425gCanned Tuna in Oil, drained and flaked, 2 tbsps oil reserved
100gRicotta Cheese(or any soft cheese)
100gFeta Cheese, crumbled
50gsun-dried Tomatoes, thinly sliced
2tbspFresh Parsley, finely chopped
2tspPine Nuts, toasted
1tbspLemon Juice
4sheetFrozen Puff Pastry, thawed
2tbspMilk
Instructions
Combine flaked tuna, ricotta, feta, sun-dried tomatoes, parsley, toasted pine nuts, lemon juice, and reserved tuna oil in a mixing bowl.
Preheat oven to 200°C. Meanwhile, cut four 12-cm rounds from each thawed pastry sheet.
Place one heaped tablespoon of the tuna mixture on each pastry round.
Brush pastry edges with milk, fold over to enclose the filling, and press edges tightly to seal. Repeat with the remaining rounds and filling.
Place puffs on lightly greased oven trays and brush the tops lightly with milk.
Bake, uncovered, for 15 minutes or until lightly browned.
