75gbutter, softened
½cupbrown sugar
1egg, lightly beaten
1tspvanilla essence
1cupself-raising flour
⅓cupmilk
2large apples, peeled, cored, quartered and thinly sliced

25gbutter, melted
1tspvanilla sugar
Instructions
Grease a shallow 20 cm round cake pan; line base with baking paper. Preheat oven to 180 C.
Beat butter, brown sugar, egg and vanilla essence in small bowl with electric mixer until light and fluffy. Stir in sifted flour and milk. Mix until well-combined. Spread mixture into prepared pan. Set aside.
Arrange apple slices evenly over cake mixture.
Cook in the oven for about 25 mins, or until a skewer inserted into the centre of the cake comes out clean. Stand cake in pan for 5 mins before turning out onto a wire rack. Brush top with extra butter; sprinkle with vanilla sugar.
